Black Bean Burritos: yummy, fast, healthy, DELISH!!

Today was one of those crazy days. The ones where you're busy running errands, making appointments and finishing yard work just in time for dinner. And usually on those days, the last thing I feel like doing is cooking {cold cereal usually ends up being our dinner...poor husband}. However, with my father-in-law being on a new diet, there's only certain things he can eat {and sadly, cold cereal is not on that list}.  And being that it was a warmer spring day {oh 80 degrees, how I love you!}, I didn't want to fix anything too warm or heavy.  It's days like today that my most favorite {fast, healthy and absolutely delicious!} recipe comes into play! My mom and I found this recipe while watching the news one morning and have loved it ever since! Even my husband {a carnivore by nature} enjoys this vegetarian meal! If you knew him, you would know that speaks volumes!!! So without any further adieu, I present to you.......

Black Bean Burritos
Makes 4 servings {with some leftovers!}
Preparation/cook time: 15-20 minutes

1 Medium Sized Tomato - Diced
1/2 Medium Sized Yellow Onion - Chopped
2 Cloves Garlic - Minced
1 Tbsp. Olive Oil
1 Can Green Chilies - Diced
1 Can Black Beans - Drained and Rinsed
Salt
Pepper
Whole wheat tortillas
(Optional Ingredients)
Cheese
1 Avocado - Diced
Fresh Cilantro
Juice of Lime
Salsa

1. Prepare all ingredients as directed. I like to chop, dice and rinse everything before I start cooking on the stove. {The reason why I drain and rinse the black beans is that by doing so, you remove a lot of the sodium from the beans that was used for preservation in the can. It makes the meal healthier! :) }
2. Saute chopped onion and minced garlic in olive oil on a non-stick skillet until onion turns an iridescent color.
3. Add diced tomato, green chilies and black beans.
4. Stir all ingredients and salt and pepper to taste.
5. Roll in tortilla and enjoy!
The optional ingredients are the things I love to add to give it a little more substance! Squeezing fresh lime on anything gives a little more pop and flavor! :)


And I just realized after cleaning up everything that I forgot to take a picture to show you how it looks when it's finished! I know I'm not very likely to try a recipe unless I see a picture of it first. So I'll leave it to you to take a picture of this recipe when you make it so I can post one! YUM! This sounds so good!! I eat gluten free {I have to}, but I can adjust the tortilla and eat this. Great recipe!!
